Broccoli Soup

2 bunches of fresh broccoli.
600ml chicken stock.
1 tbsp butter.
1 small onion (diced).
salt & pepper to taste.
Cream to garnish.


Make chicken stock and leave to cool.
Wash and cut broccoli into small portions.
Saute in fry pan with butter and onion.  Do not overcook.
Add to chicken stock and blend in food processor until pureed.
Heat and season to taste and add a tspn of cream as garnish in the bowl.
