Braised Red Cabbage


Braised Red Cabbage
Ingredients:

30g Butter.
1 small Brown Onion, halved, thinly sliced.
500g Red Cabbage, finely shredded.
50ml Apple Juice.
1 tsp Red Wine Vinegar.
1 dried Bay Leaf.
1 Apple, peeled, cored, sliced.
Salt & freshly ground black pepper.
Sugar to taste (approx 1 tbspoon).

Method:

Melt the butter in a large saucepan over high heat until foaming. 
Add the onion and cook, stirring, for 5 minutes or until soft. 
Add the cabbage and cook, stirring, for 1 minute or until just tender. 
Add the apple juice, vinegar, sugar and bay leaf. 
Reduce heat to low and cook, covered, stirring occasionally, for 20 minutes or until cabbage is tender. 
Add the apple and cook, stirring, for 5 minutes or until heated through. 
Taste and season with salt and pepper. 
Serve hot in a vegetable dish.
